Add a bunch more Quartz effects, which are included on the machine anyway, to iChat and Photobooth.

Menubar app which lets you "shove" any text, images, etc into it and then sort out later. Looks interesting, though may be duplication of others like Evernote etc. (Though looks simpler and therefore better then Evernote.) Also has iPhone app which synchronises.

Cool screensaver that I used to use before OS X 10.6 improved the ScreenSaverEngine to 64-bit. Some other good savers on this site, all need rewriting for 64-bit.

Journler - Wherever Life Takes You
Note taking, everything-grabbing, dumping-ground, taggable, sliceable, diceable, configurable, something-or-other app for Mac. Even records video/audio, uses file tree for storage, built-in web browser. Looks pretty awesome if I ever needed something like this. Competitor to Yojimbo, Devonthink, Together, etc.
