Some people are building a medieval castle in France, using 13th century building techniques. 2 hours drive from Paris, it looks great to visit sometime.

Great article on this website "Not For Tourists" (which obviously is for tourists) about catching a weekend train from Grand Central to the Appalachian Trail, less than 2 hours, $13 and you can go hiking for a while.

Amazing 30 room resort hotel on a beach in the Seychelles. Stunning, and (not surprisingly) stunningly expensive, but it would be worth it. Meals, massages, per-room butler included
